3 Clean Eating & Easy Dinners

1. Chicken & Snow Peas

Served with brown rice and topped with green onion and sesame seeds.

Ingredients:

  • 1 package of snow peas
  • 1 cup of mushrooms
  • 1/2 cup of onion
  • 1 large chicken breast

Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons lemon juice
  • 3 tablespoons honey
  • 1 tablespoon garlic
  • 1/2 teaspoon ground ginger
  • 2 tablespoons cornstarch (can add more in while cooking)

2. Spicy Shrimp Bowl

Ingredients:

  • Seasoned shrimp
  • Brown rice
  • Romaine
  • Roasted corn
  • Sautéed mixed bell peppers
  • Black beans
  • Tomatoes
  • Salsa verde
  • Cilantro jalapeño hummus
  • Cheese

3. Buffalo Chicken Quesadilla

Ingredients:

  • 2 jalapeño and lime tortillas
  • Chopped chicken
  • Buffalo hummus
  • Mexican shredded cheese
  • Seasoning salt
  • Plain Greek yogurt
  • Arugula mix
  • Sliced avocado
  • Siracha
