This vegetarian dish combines a variety of fresh and delicious ingredients that can keep in the refrigerator for 5-6 days, also makes a great snack!

Ingredients:

  • 1 cup celery
  • 1 cup tomatoes
  • 1 cup cucumbers
  • 1/2 cup onion
  • 1 can of black beans
  • 1 can of sweet corn
  • 1 can of black eyed peas
  • 1/2 cup olive oil
  • 1/3 cup white wine vinegar
  • 2 tsp chili powder
  • 1 tsp salt
  • 1/3 cup sugar
  • 1 cup cilantro

Ingredients:

  • 2 cups of blue corn tortilla chips
  • 1 cup of romaine
  • 1/4 cup of nacho cheese
  • 1/2 cup of sautéed black beans, onions and green bell pepper
  • 2 oz of grilled chicken
  • 2 tablespoons of salsa

3. Tofu and Vegetable Curry

Savory and spicy, this vegetarian version of a classic Indian dish satisfies your cravings keeping 4-5 days in the refrigerator.

Ingredients:

  • 1 jar of Trader Joe’s green curry sauce
  • 4 oz of tofu
  • 4 oz of broccoli and cauliflower
  • 1/2 cup cooked brown rice
  • 1/2 cup of lentils & peas

Sauté tofu, broccoli and cauliflower in 1 tablespoon of olive oil on the stove at medium heat for 4 minutes, add curry sauce and cook at a low heat for 5 minutes. Heat up pre-cooked peas and lentils in the microwave for 2 minutes and season with seasoning salt and pepper.
